The Casa Morana tomato capuliato is an example of the ingenuity and refinement of the Sicilian gastronomic tradition. The tomato is first salted and dried in the sun and then chopped, and even if transformed, it retains all the sweetness of the tomato as if it had just been picked. This preserve is an excellent and simple sauce for pasta, gnocchi and risotto. It also enriches meat and fish main courses or can be used to flavor your recipes.
